The 5 terminals on a variac are usually all significant.  2 will be the
winding ends (can be used for 0-120V output), 2 are tapped in from the ends
(allowing 0-140V output).  Panel or bench mounting use opposite ends of the
shaft.  Switching terminals still allows a clockwise increase in voltage for
either mounting with the full 0-140v output  I have one like this..

I have a variac with 3 terminals: 2 winding ends and one wiper.

I have an OLD variac, with 120 or 240 in and 0-280 out.  It has two
terminals for neutral.

Rick, List,

One or more of the 5 terminals on the 0-140 transformer are probably
redundant,  check with an ohmmeter to see
which ones short with no resistance.
