One or more of the 5 terminals on the 0-140 transformer are probably
redundant,  check with an ohmmeter to see
which ones short with no resistance.

The plastic plates that mount the terminals are generic and allow for
various configurations when manufactured.  I
have the 6565, and although it only has 3 terminals, it has places for many
more.
A variable transformer only needs 3 terminals, because there is only one
winding, a diagram would look much like a
potentiometer, only with a coil instead of a resistor.  One end of the
winding has no terminal, the other end is
the neutral terminal, the winding is "tapped" with the hot in terminal, and
the hot out terminal is the brush,
which allows you to change potential relative to neutral, the primary and
secondary are one.

If you want to source more than its Amp rating, try it for short periods,
then check for heat or smoke.  It will
endure 25 Amps for short periods
