Hello all,
I have been thinking a lot about spark gaps lately. Specifically: what
happens on the backside of the sine wave (of the supply transformer
voltage)?

At the output side the waveforms are as cited in the several previous answers. At the primary side, the voltage is essentially sinusoidal, forced by the power line. The input current is  also almost sinusoidal, because the large series inductance of the secondary winding of the transformer filters out most of the hight-frequency components.
