I've not studied the topic beyond a casual interest, but the choice of a toroidal core seems curious to me.  Isn't the point of a toroidal core, to as completely as possible, contain all of the magnetic flux (so the egg would see very little of it)?

	The windings are phased so that most of the flux is in the air gap.  Similar arrangement to that used in TV deflection yokes.  Simplest example would be two windings on opposite sides of a core with connections arranged "bucking".  Work with two phase or three phase or whatever.  No particular reason to use a toroidal core except that they look kinda neat - rectangular or square core would work equally well.
