Matt,

Lindsay Publications sells a little booklet "How to Run Three-Phase Motors
on Single-Phase Power" that describes 3 different ways to do this.  One of
them uses an autotransformer with a motor run capacitor.  Transformers by
themselves are not capable of introducing 120 degree phase shifts.  You need
to add capacitors and optionally another 3-phase motor to act as a rotary
