240v Variac question

Hi All!!

 I tested my dual MOT setup for use in my tube coil.  Running fullwave
rectification, I get a bit of a funny output. because one MOT is a bit
higher voltage than the other, but it works fine.  Neither pushes back
against the other because of the full wave rectifier.

One problem I'm having is excessive current draw on the mains.  Both MOTs
have been de-shunted, and together they pull an enormous amount of current
on the 120v line.  The obvious and simple answer is to run them off my 240v
drop, with the midpoint of the 2 primaries grounded and 120v on each outside
primary lead.

  But how do I hook up a variac to that setup?  I don't want to just slam
the tubes to full voltage instantly.
