Hi Jonathan,

The glaze is a fired on ceramic that bonds to the resistance wire.  I think
the commercial variable resistors are standard resistors that they go back
and grind but I would think this would be a difficult thing do to "right"
the first time in the garage.  If you had the right tools you could
probably do it, but a lot could go wrong if you don't.  If you can find a
variable version of the resistor, you can look at it and decide if it is
worth trying.

The ceramic under the top layer is pretty soft.  Water "might" help in
grinding through it.  Maybe just a sander would do it.
