Mike,
It's best to break them in slowly by doing low energy, short time runs
using a variac if you have one. If you don't, short out a few gaps or
close down your spark gap so it's not putting a lot of strain on caps.

I recall Richard Quick recommending a week of break-in before any long,
full power runs, however I was running mine full power within a day or
two.
