Yes you can "go and build", just make sure to use the right formulas :)
When you compute your capactiance, use a factor of 2.0 for the poly, and
remmber that it's n-1 for a plate cap, and 2n for a rolled cap.

[I computed the capactance of my two caps to be 0.006 and 0.0065 using
the above guide.. I got 0.0066 and 0.0072.. not too far off.]
