Is there a manufacturer and model number on the doorknobs (e.g. Sprague)...

The rating is peak voltage, usually, either DC or AC.  The RMS AC rating
would be the DC rating *0.707

Another aspect to consider is the RMS current rating (since that's what'll
burn those babies up)..
