In GMail, a reply window by default doesn't show the conversation history, even though it is there and will be sent with the reply. At the bottom of the reply body just above the Send button is a "..." icon and if you hover the mouse on it, says Show Trimmed Content. If you click it the trimmed content appears and you can now modify and/or delete it.
