So as far as capacitors, which are good to buy for an MMC? Any specific brands? Do they make caps with high recharge and discharge rates?

The by far and away most popular capacitor for MMCs is the Cornell Dubilier 942C series..
942C20P15K-F is a 0.15 uF, 2kV unit, for instance.. They run about $5 each in small quantities. http://www.cde.com/catalogs/942C.pdf VOltages are 1.5kV and 2kV Capacitances are 0.1, 0.15, etc.So you can sort of iterate to figure out what works in your application, voltage/capacitance wise.
Both Mouser and Digikey have stock, although are not necessarily the lowest cost.
