Well I guess in its most basic form you could discuss the operation of induction and transformer action to explain how the primary interacts with the secondary, then you could use LRC circuits to explain the rough concept behind the primary circuit operation. Then explain that the spark gap mearly allows the LRC circuit to operate in very high current pulses rather than continuously . 
Then you could explain electrical resonance in terms of mechanical resonance and that the secondary circuit is also an LRC circuit. Then a discussion about electric fields and why you have a toriod shape, what happens if its curvature is bigger smaller etc, what is an electrical breakdown, describe the plasma channel that the electricity is flowing thew. maybe even add in that while it appears to be a continuous spark, its really pulsing and flashing because its an AC signal. That's about as in depth as I would ever get in its explanation. But most of the time I just say its resonance like in a swing, but with electrons.
