Or, more likely, they didn't plan for using the live recorded sound (or the live recorded sound wasn't suitable for other reasons), and from the get-go decided to do the audio in post.

Remember that the whole production process is done by dozens of essentially independent teams, often arranged well in advance. If they were planning on shooting "MOS" (i.e. without sound) they wouldn't necessarily have had the sound/picture sync taken care of, etc. I've been on lots of shoots where we recorded sound, but actually didn't intend to use it in the final version: effects added later, dialog looped, etc. The audio was used for dailies and/or cue-ing on later activities.

You can also get defects in the sound recording that aren't obvious at the time, but create problems in post (e.g. someone's walkie squawking at the wrong time, a truck driving by). It's sort of like taking snapshot photos and having something pop up in the background just as you push the shutter.
