Unless you are making a twin Tesla system, the winding direction is not relevant for the primary and secondary.

Even an iron core does not care in the case of a single primary and secondary.
If you have a tapped winding then you have to pay attention to the direction of the windings for sure. I have used iron core transformers to add or subtract voltages by reversing windings for certain applications.

I am right handed. I wind coils on a motor drive with secondary horizontal. I wind left to right with the wire guided over the top. Can you guess my sec winding direction? My primaries are flat and wound clockwise looking down on them.

Well, in the end, both coils are opposing and they still works great!
