It's definitely possible, but it would really be waste of a valuable commodity.

Doubler caps do not operate at high currents or frequencies, so Mylar-dielectric (typically) microwave oven caps are suitable and widely and cheaply available for that very purpose.

MMC caps of the variety we typically use are usually of a much lower uF-rating than what is needed for a doubler, so you'd need quite a few of them.

Save your MMC caps for the tank capacitor where they're needed, and just use oven caps for their intended purpose.
