If I were going to try the "multi-MOT" approach I'd sure put some voltage limiting across the control windings, maybe an MOV for 115 volts or something, to prevent accidental electrocution!!!!! Mighty dangerous otherwise.
If done correctly the approach will work but unless the transformers are identical there will probably be some AC in the control circuit.
