In the case of sodium and potassium burning on water, it is the breaking of
the H OH bond that generates the heat. The atoms of Na or K metal in
ground state (electrically neutral) have one valence electron each which
they give up very readily in order to produce ions. The ions and electrons
break the water molecules in an extremely exothermic reaction. (I blew a 2
liter porcelain evaporating dish to pieces while demonstrating this
reaction with a small piece of potassium...went back to sodium after that)
