Sorry to hear about  your bad luck.  I would take drawings, sketches, etc. 
of everything to local machine shops/fabricators and such and get estimates 
on what they would charge you to make the stuff.  Show them to the adjuster 
and give him the high average price from a good shop, not just the highest.
That way they will see that you are not trying to rip them off.

If you have photos of everything, that will help a lot with the ins. 
adjuster.  More detail is better with those guys.  As it is super custom 
equipment, I would tack on extra money, as they will try to hit you with 
"depreciation" bs and of course to cover your loss of use for the time it 
takes to replace the stuff (esp if that's written into your policy).  I got 
screwed on that last time my tools were stolen.  How does a hand tool which 
increases in price every year and has a no-questions-asked lifetime 
guarantee depreciate?

Everyone may want to examine their own ins policies for what exactly is 
covered so you aren't left out in the cold...
