Mark,
The only way to safely run 120 volt MOTs from a 240 volt supply is to run
the primaries of two (preferably matched) MOTs in series. MOTs start
saturating at around 100 volts. Higher than that the current starts rising
dramatically, even with no load. At 240 volts, you will quickly end up with
a smoking hot transformer that may catch fire and/or trip a breaker.
NEVER hook one 120 volt MOT to 240!
