Dan,
I "think" due to the variac limiting the current, the voltage drops
below the minimum required to run the motor. Using the resonant
design allows you to adjust the inductance and maintain a suitable
voltage. If the voltage drops, the motor will drop out of sync and
ultimately stop running. Some "lucky" people have been able to omit
the capacitors altogether, though this is generally with large (>1HP)
motors.
