And both have troubles with large temperature variations (various fractions
settling/gumming/solidifying out)... after all, they're designed to be
consumed when bought, not stored for years...

Commercial insulating oil has an anti-oxidant added to prevent spoilage.
I've seen both BHT and alpha-tocopherol (Vitamin E) added...
