I have been using 2 MO diodes in series for the de-Qing diode with no
problems so far.  And I have used just one MOT running in air with no
insulation problems (no flashovers, etc.).  Like you, I left the connection
between secondary and core, and mount the whole transformer on insulators
cut from those wonderful white plastic breadboards.  I don't think you need
to put your MOT in oil for your particular power transformer, but it can't
hurt.
