A variac can be considered a "Variable Transformer", hence, the name,
variac.

Variac are most commonly used to supply variable voltage to a device
connected to it. Why? well, sometimes the device might be in a "repair
status", and the technician might want to monitor power as he brings the
device slo-o-o-wly up to 120vac.
when I was a line technician, we used them to "bring up" brand new
computer power supply's. It was a easy way to detect problems with
backward electrolytics, etc. :-)
