I doubt that electrode geometry could affect the spark channel area or resistance, as I think the channel area is strictly a function of current.  It may be more of the idea behind a cylinder gap - spread the arcing out over a wide area to minimize electrode erosion and localized heating, even though the spark occurs only at one small spot at any given instant.
