You've just experienced the desire of an inductance to keep a constant
current flowing.
When you attached the battery to the MOT the inductance in the mot was
effectively charged and the current built up to a constant value. When you
disconnected the battery the rapidly collapsing magnetic field in the
inductor created a high voltage.
