I noticed what appeared to be the same phenomenon.  When I put
a slightly oversize toroid on a 9kv-at-60ma TC, this prevents steady
breakout.  The spark gap is very quiet when the toroid is not breaking
out, but when it does let loose, the noise level goes way up.  This
is how I get 30" streamers -- instead of the 24" with a smaller toroid
that constantly realeases the streamers.  Sounds like it may be the
streamers making the wife(s) unhappy.  Maybe we can buy them
some ear plugs, I bought some for myself.  Don't have a wife to try
and see if it works though, so take this advice with extreme caution.
