When placing capacitors in series, the total capictance can be found using:
Ctotal = 1/(1/C1 + 1/C2...).  
When placing capacitors in series, the peak voltage is added, so your 
assumptions that the capacitance drops but peak voltage increases is correct. 
 
When placing capacitors in parallel, their capicitance is simply added 
(Ctotal = C1 + C2).  Hope this is some help.
